I hope you didn’t think I was leaving with with a words-only post tonight, my little bean sprouts! Not gonna lie, I was totally going to. I worked at both of my jobs today and got home and didn’t want to do ANYTHING, but then realised eating supper would probably be a good idea. So I made a sandwich (no great effort involved) and had my camera along for the ride. Here’s what went down….my esophagus and into my stomach.
It’s my Bacon Lettuce Tomato Cucumber Pepper Sprouts Daiya sandwich!
I went through a major phase a year or so ago where all I wanted was alfalfa sprouts, all the time. I put them on everything. It was a good phase. Let’s watch this clip to understand why I love them so much.
TEMPEH! Absent for so long and now there’s an abundance of you in my life! I think I like this new arrangement. I have made tempeh bacon in the past, but since it was a long day I copped out and bought pre-made stuff from Tofurky. I love that company and everything they do.
I am on a huge maple kick right now, so the smell of this frying up done near drove me wild! I melted Daiya cheese (yes, it’s available locally in Halifax now–I am a very happy vegan!) all over it.
I chopped some fresh veggies, scrubbed up some lettuce, toasted herb Focaccia bread and slathered it with Vegenaise, then tucked in!
This was a perfect way to end a long and rainy day, let me tell you. Don’t forget to set your clocks back tonight! I am going to catch my extra hour of sleep now. Good night, darlings.
