An Awesome Day

For the past three years I have worked at a leading health insurance company and it has been wonderful. I love my company and I am crazy about my coworkers. This is my last week working with them because in a week and a half I will be hopping across the pond to live in London. I will miss my company terribly; it just happens to be on the wrong continent.

Whenever we have something to celebrate in the sales department we always, always have a “food day” (potluck). These food days are the perfect way to share recipes, show off cooking skillz, and socialise. We love ‘em!

I always slide a vegan dish into the fray (usually cupcakes) and my coworkers have asked questions and gained a lot of knowledge about veganism over the years, oftentimes ensuring that there were options for me besides my own. My coworker, Teresa, even veganised her signature “Heart Cookie” for me last Christmas! I have received a lot of love from these folks.

WELL! Let me tell you what they did yesterday, dear readers. In true sales department style, they held a farewell food day for me over lunch. I knew a “top secret” potluck was being held (I was told to save the date–ahaha). A couple of people asked me questions about vegan food, and I figured that we were holding a “regular” food day and a couple extra people were treating me to vegan fare. I was wrong.

When I walked into our boardroom I was presented with a fully vegan spread and a room full of love. It was an amazing feeling, let me tell you!

I was so proud of how creative and into it my coworkers got! Don’t just take my word for it, take a look at this spread! 100% vegan, 100% delicious!

I had planned for weeks to bake oodles of cupcakes to thank them for being so wicked to work with, and my cupcake attack just happened to coincide perfectly with this food day. Oooooh, Universe! You always work things out.

This day was very nearly perfect and I loved it, just as I love them. I will miss you all.
